  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 diced mango
  • 2 cups shredded cabbage
  • 1 sliced red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • juice of 1 lime
  • salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Rub chicken thighs with jerk seasoning and olive oil. Grill for 6-7 minutes on each side until cooked through (internal temperature should reach at least 165°F).
  3. In a large bowl, combine diced mango, shredded cabbage, sliced red bell pepper, and chopped cilantro.
  4. In another bowl, whisk together mayonnaise, honey, lime juice, salt, and pepper until smooth.
  5. Pour the dressing over the mango slaw mixture and toss gently to coat.
  6. Once the chicken is done grilling, slice it into strips and serve over the mango slaw. Drizzle with additional honey lime cream if desired.
