Ingredients
- 4 boneless, skinless chicken thighs
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 diced mango
- 2 cups shredded cabbage
- 1 sliced red bell pepper
- 1/4 cup chopped cilantro
- 1/4 cup mayonnaise
- 2 tablespoons honey
- juice of 1 lime
- salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Rub chicken thighs with jerk seasoning and olive oil. Grill for 6-7 minutes on each side until cooked through (internal temperature should reach at least 165°F).
- In a large bowl, combine diced mango, shredded cabbage, sliced red bell pepper, and chopped cilantro.
- In another bowl, whisk together mayonnaise, honey, lime juice, salt, and pepper until smooth.
- Pour the dressing over the mango slaw mixture and toss gently to coat.
- Once the chicken is done grilling, slice it into strips and serve over the mango slaw. Drizzle with additional honey lime cream if desired.
