  • 1 (13.5 oz) can coconut milk
  • 2 tbsp curry powder
  • 1 cup chicken broth
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, jerk seasoning, egg, onion, garlic, salt, and pepper until combined.
  2. Form mixture into 1-inch meatballs and place on a baking sheet.
  3. Heat oil in a skillet over medium heat; brown meatballs for 2-3 minutes per side.
  4. In the same skillet, combine coconut milk, curry powder, chicken broth, brown sugar, and soy sauce; stir well.
  5. Simmer sauce for 10-15 minutes until thickened.
  6. Add meatballs to the sauce and simmer for an additional 5 minutes until fully cooked.
  7. Garnish with chopped cilantro before serving.
