- 1 lb ground chicken
- 3 large zucchinis
- 2 cups marinara sauce (no sugar added)
- 3 cups shredded mozzarella cheese
- 1 cup shredded parmesan cheese
- Salt, pepper, and garlic powder to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Halve the zucchinis lengthwise and scoop out the centers. Lightly salt and set aside.
- In a skillet over medium heat, cook ground chicken with salt, pepper, and garlic powder until browned.
- Stir in marinara sauce and simmer for about 5–7 minutes.
- Place zucchini halves in a baking dish cut side up and fill each with the chicken mixture.
- Top with mozzarella and parmesan cheese.
- Bake for 20–25 minutes until bubbly and golden brown.
- Optional: Broil for an additional 2–3 minutes for extra crispiness.
