  • 3 large zucchinis
  • 2 cups marinara sauce (no sugar added)
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Halve the zucchinis lengthwise and scoop out the centers. Lightly salt and set aside.
  3. In a skillet over medium heat, cook ground chicken with salt, pepper, and garlic powder until browned.
  4. Stir in marinara sauce and simmer for about 5–7 minutes.
  5. Place zucchini halves in a baking dish cut side up and fill each with the chicken mixture.
