Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 1 onion
- 1 large carrot
- 2 stalks celery
- 1 clove garlic
- 4 sprigs thyme
- 1½ litres turkey or chicken stock
- 75g giant couscous
- 250g cooked turkey or chicken
- 2 bay leaves
- salt and pepper to taste
- 1 tbsp parsley (chopped)
Instructions
- Heat olive oil and butter in a large pot over low heat. Add chopped onion, celery, carrots, and minced garlic with thyme leaves. Sauté for about 5 minutes until softened.
- Pour in the turkey or chicken stock and add the cooked turkey along with bay leaves. Bring to a boil and season with salt and pepper.
- Add giant couscous to the boiling mixture. Reduce heat to medium and cook for about 10 minutes until couscous is tender.
- Remove from heat; stir in chopped parsley before serving hot.
