Ingredients

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion
  • 1 large carrot
  • 2 stalks celery
  • 1 clove garlic
  • 4 sprigs thyme
  • litres turkey or chicken stock
  • 75g giant couscous
  • 250g cooked turkey or chicken
  • 2 bay leaves
  • salt and pepper to taste
  • 1 tbsp parsley (chopped)

Instructions

  1. Heat olive oil and butter in a large pot over low heat. Add chopped onion, celery, carrots, and minced garlic with thyme leaves. Sauté for about 5 minutes until softened.
  2. Pour in the turkey or chicken stock and add the cooked turkey along with bay leaves. Bring to a boil and season with salt and pepper.
  3. Add giant couscous to the boiling mixture. Reduce heat to medium and cook for about 10 minutes until couscous is tender.
  4. Remove from heat; stir in chopped parsley before serving hot.
