  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar (plus more for garnish)
  • ½ teaspoon salt
  • 1 tablespoon lemon zest
  • 2/3 cup freshly squeezed lemon juice
  • 4 large eggs
  • 2 cups granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine butter, powdered sugar, flour, and salt until crumbly. Press into the bottom of a greased 9×13 inch baking pan.
  3. Bake for 15-20 minutes until lightly golden brown. Allow to cool slightly.
  4. In another bowl, whisk together eggs, granulated sugar, lemon zest, and lemon juice until smooth.
  5. Pour the lemon filling over the cooled crust and bake for an additional 25-30 minutes until set but slightly jiggly in the center.
  6. Cool completely before slicing into squares. Dust with additional powdered sugar before serving.
