Ingredients
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- ½ cup powdered sugar (plus more for garnish)
- ½ teaspoon salt
- 1 tablespoon lemon zest
- 2/3 cup freshly squeezed lemon juice
- 4 large eggs
- 2 cups granulated sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine butter, powdered sugar, flour, and salt until crumbly. Press into the bottom of a greased 9×13 inch baking pan.
- Bake for 15-20 minutes until lightly golden brown. Allow to cool slightly.
- In another bowl, whisk together eggs, granulated sugar, lemon zest, and lemon juice until smooth.
- Pour the lemon filling over the cooled crust and bake for an additional 25-30 minutes until set but slightly jiggly in the center.
- Cool completely before slicing into squares. Dust with additional powdered sugar before serving.
