  • 12 fresh oysters, on the half shell
  • 6 tbsp unsalted butter
  • 2 garlic cloves, finely minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh parsley
  • Sea salt and black pepper to taste

Instructions

  1. Preheat the grill to high (500°F / 260°C).
  2. In a small saucepan over low heat, melt the butter and sauté minced garlic until fragrant. Stir in lemon juice, zest, parsley, salt, and pepper; remove from heat.
  3. Place oysters flat side up on the grill. Close the lid and cook for 2–3 minutes until edges curl.
  4. Spoon about 1 teaspoon of lemon butter sauce over each oyster. Close the lid again and cook for another 1–2 minutes until sizzling.
  5. Carefully remove oysters with tongs and serve immediately with lemon wedges.
