Ingredients
- 3 large eggs
- ½ cup full-fat cottage cheese
- 1 tablespoon cornstarch
- ¼ teaspoon cream of tartar
- ½ cup fresh blueberries
- Optional: 1 tablespoon powdered sweetener
- Optional: ½ teaspoon vanilla extract
- Optional: ½ teaspoon lemon zest
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate egg yolks from whites into two bowls. Blend cottage cheese until smooth.
- In the yolk bowl, mix blended cottage cheese with cornstarch, vanilla extract, lemon zest, and sweetener if using.
- In another bowl, whip egg whites with cream of tartar until stiff peaks form.
- Gently fold the whipped egg whites into the cottage cheese mixture without deflating them.
- Fold in blueberries until evenly distributed.
- Drop mounds of batter onto the prepared baking sheet with space between each mound.
- Bake for 25-30 minutes until golden brown and firm to touch.
- Allow to cool before serving.
