Ingredients
- 2 ripe mangos (peeled & diced) or 1 ½ cups frozen mango (thawed & drained)
- 2–3 habanero peppers (stemmed & seeded)
- 4 cloves garlic (minced)
- ½ cup honey or maple syrup
- ¼ cup apple cider vinegar
- 1 tbsp olive oil
- ½ cup water (adjust as needed)
- ½ tsp salt (to taste)
Instructions
- In a saucepan, heat olive oil over medium heat. Add minced garlic and chopped habaneros; sauté until fragrant (about 1–2 minutes).
- Transfer the mixture to a blender and add diced mangoes, honey (or maple syrup), apple cider vinegar, and enough water to reach your desired consistency. Blend until smooth.
- Return the blended mixture to the saucepan and simmer on medium-low heat for about 10–12 minutes, stirring occasionally until thickened.
- Taste and adjust sweetness or tanginess as desired.
- Allow to cool before storing in jars. Refrigerate for up to 7–10 days.
