For the Banana Bread
3–4 medium bananas (or 2 large bananas), mashed
2 tablespoons brown sugar
1½ teaspoons vanilla extract
½ teaspoon ground cinnamon
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
For the Maple Glaze
¼ cup unsalted butter
½ cup pure maple syrup
¼ teaspoon ground cinnamon
½ teaspoon vanilla extract
1 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a bowl, mash the bananas and mix them with the brown sugar, vanilla extract, and cinnamon. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir the banana mixture into the butter mixture until combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- To prepare the maple glaze, melt the butter in a small saucepan over medium heat.
- Stir in the maple syrup, cinnamon, and vanilla extract. Remove from heat.
- Whisk in the powdered sugar until smooth and slightly thick.
- Drizzle the glaze over the cooled banana bread before slicing and serving.
