Ingredients
For the Tortellini Dish
1 (19 oz) bag frozen cheese tortellini
2 tablespoons olive oil
1½ pounds boneless, skinless chicken breasts, cut into bite-sized pieces
½ teaspoon black pepper
½ teaspoon Italian seasoning
½ teaspoon paprika
2 tablespoons butter
½ cup sun-dried tomatoes in oil, drained and thinly sliced
3 teaspoons garlic, minced
1 cup low-sodium chicken broth
2 cups heavy cream
1 teaspoon Italian seasoning
1 teaspoon black pepper
1 teaspoon paprika
1 cup parmesan cheese, finely shredded
2 cups baby spinach, chopped
Instructions
- Cook the frozen cheese tortellini according to the package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken pieces with ½ teaspoon black pepper, ½ teaspoon Italian seasoning, and ½ teaspoon paprika.
- Add the chicken to the skillet and cook for 6–8 minutes, stirring occasionally, until the chicken is golden and cooked through. Remove the chicken from the pan and set aside.
- In the same skillet, melt the butter over medium heat.
- Add the sliced sun-dried tomatoes and minced garlic. Cook for about 1 minute until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan for extra flavor.
- Add the heavy cream, 1 teaspoon Italian seasoning, 1 teaspoon black pepper, and 1 teaspoon paprika. Stir well and bring to a gentle simmer.
- Stir in the shredded parmesan cheese and cook for 2–3 minutes until the sauce becomes creamy and slightly thickened.
- Add the cooked chicken, tortellini, and chopped baby spinach to the skillet.
- Stir gently until everything is well coated in the sauce and the spinach wilts.
- Remove from heat and serve warm.
