  • 1 and 1/2 tablespoons butter
  • 4 cloves garlic, grated
  • 2 cups light cream
  • 1 cup fresh grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes + 1 tablespoon oil from the jar
  • 1 tablespoon fresh basil, chopped
  • 2 teaspoons chicken bouillon powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crushed red pepper
  • 3/4 box thin linguini or other long noodles of your choice
  • Reserved pasta water

Instructions

  1. In a blender or food processor, combine sun-dried tomatoes and oil to create a coarse paste.
  2. Boil salted water in a pot, cook noodles according to package instructions, and reserve about 1/4 cup of pasta water before draining.
  3. In a non-stick pan over medium heat, melt butter and sauté garlic until fragrant. Add spices and chicken bouillon powder.
  4. Pour in light cream and let simmer gently for about 5 minutes. Stir in Parmesan cheese, tomato paste, salt, pepper, garlic powder, and basil; simmer for another 5-7 minutes.
  5. Mix in the cooked noodles until well coated with sauce. Use reserved pasta water if necessary to adjust consistency.
  6. Serve immediately while hot.
