Ingredients
- 8 cups organic celery (sliced)
- 1 cup cherry tomatoes (halved)
- 1/2 cup fresh parsley (chopped)
- 1/2 cup fresh basil (chopped)
- 1/3 cup red onion (sliced thin)
- 1/2 cup extra-virgin olive oil
- 1/4 cup lemon juice
- 1/2 teaspoon grated lemon zest
- 1 tablespoon Dijon mustard
- 1–1/2 teaspoons dried oregano
- 3 tablespoons kalamata olives, pitted and chopped
- 1 clove garlic, grated on small hole grater
Instructions
- Rinse and dry all vegetables.
- Thinly slice celery diagonally and chop parsley, basil, and red onion.
- In a large bowl, combine all chopped vegetables.
- In a separate jar or bowl, mix dressing ingredients until well combined.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve chilled or at room temperature.
