- 1 lb boneless skinless chicken breast
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 garlic cloves
- 1 cup Persian cucumbers
- 1 cup cherry tomatoes
- 1/2 cup feta cheese
- 1/2 cup tzatziki
- 8 whole wheat pitas
Instructions
- Marinate the chicken: In a non-reactive bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper. Add the chicken pieces and let marinate for at least 15 minutes.
- Prepare the salsa: Mix chopped cucumbers, cherry tomatoes, red bell pepper, red onion, parsley (or other herbs), feta cheese, lemon juice, salt, and pepper in a bowl.
- Cook the chicken: Heat a large skillet over medium-high heat. Add marinated chicken in a single layer; cook for about 3-5 minutes until golden brown. Flip and cook for another 3-4 minutes until fully cooked.
- Warm the pitas: Use a griddle to warm pitas until soft.
- Assemble: Fill each pita with cooked chicken and top with salsa and tzatziki.
