  • 1/4 cup diced red onion
  • 1 cup cooked quinoa
  • 2 cooked chicken breasts (diced)
  • 1/2 cup pepperoncini
  • 1/3 cup feta cheese (or plant-based alternative)
  • 1/3 cup olive oil
  • 3 tablespoons apple cider vinegar
  • 1 1/2 teaspoons dijon mustard
  • Juice from 1 lemon
  • 2 teaspoons minced garlic
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and chop romaine lettuce; place in a large mixing bowl.
  2. Dice cucumber, grape tomatoes, and red onion using a vegetable chopper; add to the bowl.
  3. Stir in cooked quinoa, diced chicken, pepperoncini, and feta cheese.
  4. In a salad dressing shaker, mix olive oil, apple cider vinegar, dijon mustard, lemon juice, minced garlic, oregano, salt, and black pepper; shake well.
