- 14 oz chopped tomatoes
- 1/2 onion
- 9 oz shell pasta
- 4 1/2 cups vegetable stock
- Salt and pepper to taste
- Fresh coriander or cilantro for garnish
Instructions
- If using fresh tomatoes, roughly chop them along with the onion.
- Blend the chopped tomatoes and onion in a food processor until smooth.
- In a large pot, heat olive oil over medium heat and add the shell pasta, stirring until golden brown.
- Add the blended tomato mixture to the pot and let it simmer for a couple of minutes.
- Pour in the vegetable stock and bring to a gentle simmer.
- Cook until the pasta is al dente, being careful not to overcook.
- Serve hot, garnished with fresh coriander or cilantro.
