- 1 cup plain full fat Greek yogurt
- ¼ cup unsalted butter (melted and slightly cooled)
- 2 eggs
- 2 teaspoons vanilla extract
- ¼ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ cup maple syrup
- 1 ½ cups all-purpose flour
- 1 cup mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
- In one bowl, whisk together the flour, salt, baking powder, and baking soda.
- In another bowl, combine the Greek yogurt, maple syrup, melted butter, and vanilla. Mix well before adding the eggs.
- Gently fold in the dry ingredients until just combined.
- Fold in the mini chocolate chips.
- Evenly distribute the batter into the muffin pan and bake for 12-14 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool in the pan for a few minutes before transferring them to a wire rack.
