- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream
- 1/4 cup granulated sugar (for topping)
Instructions
- Prepare the crust by mixing the graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press into muffin tin liners and chill for 15 minutes.
- For the filling, beat cream cheese and powdered sugar until smooth. Mix in vanilla extract. In another bowl, whip heavy cream until stiff peaks form and gently fold it into the cream cheese mixture.
- Spoon or pipe the filling into crusts and chill for at least 3 hours or overnight.
- Before serving, sprinkle sugar on top of each cheesecake and use a kitchen torch to caramelize the sugar until golden brown.
