Ingredients
- 3/4 cup granulated sugar
- 1 egg
- 1/3 tsp kosher salt
- 2 tsp vanilla extract
- 1/2 cup vegetable oil
- 1 tsp lemon zest
- 3/4 cup milk
- 1/3 tsp cinnamon
- 2 cups flour
- 2 tsp baking powder
- 2 cups chopped strawberries
- 1/3 cup strawberries (for glaze)
- 1 1/2 cups powdered sugar
- 1/2 tsp vanilla extract (for glaze)
- 1–2 tbsp milk (for glaze)
Instructions
- Preheat your oven to 350°F (180°C) and prepare a 9 by 5-inch loaf pan by lining it with parchment paper.
- In a large mixing bowl, whisk together vegetable oil, egg, granulated sugar, milk, and vanilla extract until well combined.
- Gradually add flour, baking powder, cinnamon, and salt to the wet mixture; stir gently until just combined.
- Fold in the chopped strawberries until evenly distributed.
- Pour the batter into the prepared loaf pan and optionally top with additional strawberries.
- Bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
- Allow cooling before glazing.
