Ingredients
- 4 medium Yukon Gold potatoes, sliced
- 1/2 large onion, sliced
- 6 large garlic cloves, sliced
- 3 large plum tomatoes, sliced
- 2 medium carrots, thinly sliced
- 1/4 cup olive oil
- 1 tbsp harissa paste
- 1 1/2 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground ginger
- 1/2 tsp ground turmeric
- 1/2 cup vegetable broth
- Salt and freshly ground black pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 350°F (177°C).
- In a small bowl, mix olive oil, harissa paste, coriander, cumin, ginger, turmeric, salt, and pepper until well combined.
- Toss the sliced potatoes in the spice mixture until evenly coated.
- In a round baking dish, layer half of the onion slices, followed by half of the spiced potatoes, garlic slices, tomatoes, and carrots. Season with salt and pepper.
- Repeat the layers with the remaining ingredients.
- Drizzle any leftover spice mixture over the top and carefully pour vegetable broth around the layers.
- Cover tightly with foil and bake for about 1.5 hours or until potatoes are tender.
- Let sit covered for an additional 10 minutes before garnishing with chopped cilantro.
