Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 4 tbsp butter
- 4 cloves garlic
- 1/4 cup all-purpose flour
- 3 cups milk
- 1 cup chicken broth
- 8 oz cream cheese
- 1 lb rigatoni pasta
- 2 tbsp Cajun seasoning
- 1 tbsp paprika
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 cup mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Cook rigatoni according to package directions; drain and set aside.
- Toss chicken with Cajun seasoning, paprika, garlic powder, and black pepper.
- In a skillet, melt 2 tbsp of butter and sauté chicken until golden brown; remove from skillet.
- Make garlic sauce by sautéing minced garlic in remaining butter; whisk in flour to create a roux.
- Gradually add milk and chicken broth; bring to a simmer while stirring.
- Stir in cream cheese until melted; add mozzarella and Parmesan until smooth.
- Combine cooked pasta and chicken with the sauce; transfer to a baking dish.
- Top with extra mozzarella and bake at 375°F for 15-20 minutes until bubbly.
