  • 4 tbsp butter
  • 4 cloves garlic
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1 cup chicken broth
  • 8 oz cream cheese
  • 1 lb rigatoni pasta
  • 2 tbsp Cajun seasoning
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 cup mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook rigatoni according to package directions; drain and set aside.
  2. Toss chicken with Cajun seasoning, paprika, garlic powder, and black pepper.
  3. In a skillet, melt 2 tbsp of butter and sauté chicken until golden brown; remove from skillet.
  4. Make garlic sauce by sautéing minced garlic in remaining butter; whisk in flour to create a roux.
  5. Gradually add milk and chicken broth; bring to a simmer while stirring.
  6. Stir in cream cheese until melted; add mozzarella and Parmesan until smooth.
  7. Combine cooked pasta and chicken with the sauce; transfer to a baking dish.
  8. Top with extra mozzarella and bake at 375°F for 15-20 minutes until bubbly.
