  • 250 g Baby Bella mushrooms (thinly sliced)
  • 2 garlic cloves (minced)
  • 1/4 cup apple cider vinegar
  • 1 tbsp salt and pepper (to taste)
  • 1 dash crushed red pepper flakes (optional)
  • 1 package Brie cheese (sliced)
  • 1 bunch fresh parsley (finely chopped for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the baguette into 1/2 inch rounds and brush both sides with olive oil. Toast on a baking sheet for 3-5 minutes until golden brown.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add sliced mushrooms, cooking until golden brown (about 5-7 minutes). Add apple cider vinegar and simmer until reduced by half. Season with salt, pepper, and crushed red pepper flakes if desired.
  3. Assemble the crostinis: place Brie on each toasted baguette slice, top with the mushroom mixture, and return to the oven to bake for 3-5 minutes until the cheese melts.
  4. Garnish with chopped parsley before serving warm.
