Ingredients
- 1 baguette (sliced into 1/2 inch thick rounds)
- 1 tbsp olive oil (for brushing)
- 250 g Baby Bella mushrooms (thinly sliced)
- 2 garlic cloves (minced)
- 1/4 cup apple cider vinegar
- 1 tbsp salt and pepper (to taste)
- 1 dash crushed red pepper flakes (optional)
- 1 package Brie cheese (sliced)
- 1 bunch fresh parsley (finely chopped for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Slice the baguette into 1/2 inch rounds and brush both sides with olive oil. Toast on a baking sheet for 3-5 minutes until golden brown.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add sliced mushrooms, cooking until golden brown (about 5-7 minutes). Add apple cider vinegar and simmer until reduced by half. Season with salt, pepper, and crushed red pepper flakes if desired.
- Assemble the crostinis: place Brie on each toasted baguette slice, top with the mushroom mixture, and return to the oven to bake for 3-5 minutes until the cheese melts.
- Garnish with chopped parsley before serving warm.
