Ingredients

  • Frozen Dumplings (14-20)
  • Coconut Milk (1 can, 14 ounces)
  • Red Curry Paste (3 tablespoons)
  • Soy Sauce (3 tablespoons)
  • Fresh Ginger (2 teaspoons, minced)
  • Garlic (2 cloves, minced)
  • Rice Vinegar (1 tablespoon)
  • Honey or Maple Syrup (2 tablespoons)
  • Sesame Oil (2 tablespoons)
  • Cilantro
  • Green Onions (2, sliced)
  • Chili Crunch (1-2 tablespoons)
  • Sesame Seeds
  • Baby Spinach (optional)

Instructions

  1. Preheat your oven to 375°F and grease a medium baking dish or ovenproof skillet.
  2. In a mixing bowl, whisk together the coconut milk, red curry paste, honey or maple syrup, soy sauce, sesame oil, rice vinegar, ginger, and garlic until combined.
  3. Place the frozen dumplings evenly in the greased baking dish and pour the sauce over them.
  4. Cover the dish with foil and bake for 20 minutes.
  5. Remove the foil and bake for an additional 5-10 minutes until the sauce is bubbling and dumplings are tender.
  6. If using baby spinach, add it on top right before serving for added nutrition.
