Ingredients
- 1 bunch celery, trimmed and cut into 1-inch pieces
- 1 tablespoon extra virgin olive oil
- 4 garlic cloves, minced
- 1 14-ounce can chopped tomatoes in juice
- 3 tablespoons chopped flat-leaf parsley
- Salt and freshly ground pepper to taste
Instructions
- Steam the celery for about 5 minutes until just tender.
- In a large skillet, heat olive oil over medium heat and sauté minced garlic for 30 seconds until fragrant.
- Add canned tomatoes, parsley, salt, and pepper; stir to combine.
- Gently fold in steamed celery and cook until heated through, about 10 minutes.
- Serve immediately, garnished with extra parsley.
