- 1 1/2 pounds diced potatoes
- 1 tablespoon olive oil
- 1 small diced onion
- 10 ounces Mexican turkey sausage
- Salt and freshly ground black pepper, to taste
- Chopped cilantro for garnish
Instructions
- In a medium saucepan, add diced potatoes and cover with water. Bring to a boil over high heat.
- Once boiling, reduce heat and simmer for 5-8 minutes until the potatoes are fork-tender. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add diced onion and sauté for about 5 minutes until softened.
- Add turkey sausage, breaking it into smaller pieces as it cooks for 8-10 minutes until fully cooked through.
- Stir in cooked potatoes and mix well with the sausage mixture; cook for an additional 5 minutes.
- Season with salt and pepper, garnish with chopped cilantro, and serve hot.
