- 200 g granulated sugar
- 115 g unsalted butter, softened
- 2 large eggs
- 1 tablespoon freshly grated lemon zest
- 60 ml freshly squeezed lemon juice
- 190 g all-purpose flour
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 120 ml whole milk
- 120 g powdered sugar
- 2 tablespoons lemon juice
Instructions
- Preheat your oven to 175°C (350°F). Grease and line a 23 cm round cake pan with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until pale and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the lemon zest and lemon juice until fully combined.
- Add the flour, baking powder, and salt; mix gently until just combined.
- Gradually stir in the milk until the batter is smooth.
- Pour the batter into the prepared cake pan and bake for 30–35 minutes or until a skewer inserted comes out clean.
- While baking, whisk together powdered sugar and lemon juice for the glaze.
- Once baked, let cool slightly before transferring to a wire rack and drizzling with glaze.
