  • 1 tablespoon freshly grated lemon zest
  • 60 ml freshly squeezed lemon juice
  • 190 g all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 120 ml whole milk
  • 120 g powdered sugar
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and line a 23 cm round cake pan with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until pale and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the lemon zest and lemon juice until fully combined.
  5. Add the flour, baking powder, and salt; mix gently until just combined.
  6. Gradually stir in the milk until the batter is smooth.
  7. Pour the batter into the prepared cake pan and bake for 30–35 minutes or until a skewer inserted comes out clean.
  8. While baking, whisk together powdered sugar and lemon juice for the glaze.
  9. Once baked, let cool slightly before transferring to a wire rack and drizzling with glaze.
