  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cold heavy whipping cream
  • 34 ripe peaches, peeled and sliced
  • Optional: 2 tablespoons peach jam for glaze

Instructions

  1. Prepare the crust by mixing graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of a springform pan and chill for 15 minutes.
  2. In a large bowl, beat softened cream cheese until smooth. Add powdered sugar and vanilla extract; mix until creamy.
  3. In another bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
  4. Spread the cheesecake filling evenly over the chilled crust using a spatula.
  5. Arrange sliced peaches on top of the cheesecake filling. Optionally brush with warmed peach jam for a glossy finish.
