Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt; set aside.
- In a large bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the mixture; mix until combined.
- Gradually mix in the dry ingredients until just combined; avoid overmixing.
- Gently fold in the diced peaches.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Mix ground cinnamon with granulated sugar and sprinkle generously on top of each cookie before baking.
- Bake for 12–15 minutes or until golden brown around the edges.
- Allow cookies to cool on the baking sheet for five minutes before transferring them to a wire rack.
