Ingredients
- 2 cups + 2 Tbsp all-purpose flour
- 1/3 cup brown sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 1 egg
- 1/4 cup heavy whipping cream (plus more for brushing)
- 1/4 cup sour cream
- 2 tsp vanilla extract
- 1/2 cup fresh peaches, diced
- 1/2 cup powdered sugar
- 2 tsp vanilla extract
- 1–3 Tbsp heavy whipping cream for glaze
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, brown sugar, baking powder, and salt until combined.
- Cut in cold butter until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the egg, heavy whipping cream, sour cream, and vanilla extract. Add to the dry ingredients along with diced peaches; stir gently until just combined.
- On a floured surface, shape the dough into a circle about 1 inch thick and cut into wedges or round shapes.
- Place on the prepared baking sheet and brush tops lightly with cream. Bake for about 16 minutes or until golden brown.
- For the glaze, mix powdered sugar with vanilla extract and enough heavy cream to reach desired consistency. Drizzle over warm scones before serving.
