  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together flour, cinnamon, baking soda, and salt; set aside.
  3. In another bowl, cream together softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually add the dry ingredients to the wet mixture alternately with sour cream until just combined.
  5. Fold in mashed bananas and optional nuts.
  6. Pour batter into the prepared loaf pan and bake for 50-55 minutes until golden brown; a toothpick should come out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
