- 1 3/4 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup unsalted butter (softened)
- 3/4 cup light brown sugar
- 1/2 cup creamy peanut butter
- 2 large eggs
- 1/4 cup sour cream
- 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, whisk together flour, cinnamon, baking soda, and salt; set aside.
- In another bowl, cream together softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla.
- Gradually add the dry ingredients to the wet mixture alternately with sour cream until just combined.
- Fold in mashed bananas and optional nuts.
- Pour batter into the prepared loaf pan and bake for 50-55 minutes until golden brown; a toothpick should come out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
