Ingredients
- 1 cup melted butter
- 1 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 1 ½ cups all-purpose flour
- 1 cup dark cocoa powder
- 1 teaspoon baking soda
- 12 oz semi-sweet chocolate chips
- 6 tablespoons room temperature unsalted butter
- 1 cup creamy peanut butter
- 12 oz dark chocolate chips
- ¾ cup heavy whipping cream
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, mix melted butter, brown sugar, and granulated sugar until smooth. Add eggs one at a time, followed by vanilla extract.
- In another bowl, whisk together flour, cocoa powder, baking soda. Gradually combine with the wet mixture and stir in chocolate chips.
- Scoop tablespoon-sized dough onto sheets and bake for about 10 minutes or until edges firm up but centers remain soft. Let cool on racks.
- For the filling, beat unsalted butter with peanut butter until smooth; gradually add powdered sugar and vanilla.
- Once cookies cool completely, spread peanut butter filling between two cookies to create sandwiches.
- For the ganache, melt dark chocolate chips with heavy cream over low heat until smooth; drizzle over cookie sandwiches.
