- 1/2 cup unsalted butter (softened to room temperature)

- 1/3 cup granulated sugar
- 1/2 cup smooth peanut butter
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 3/4 cup plus 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup old-fashioned oats
- 1 cup chocolate chips (divided)
Instructions
- Preheat the oven to 350°F (180°C) and line cookie sheets with parchment paper.
- In a large bowl, cream together softened butter, brown sugar, granulated sugar, and peanut butter until smooth.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually mix in flour, baking powder, baking soda, and salt until just combined.
- Stir in oats gently by hand until well mixed.
- Fold in 3/4 cup of chocolate chips; reserve 1/4 cup for topping if desired.
- Form dough into balls using about 3 tablespoons each; chill if sticky.
- Bake for 10–12 minutes or until just set on top; allow cooling on cookie sheets.
