  • 2 ripe pears (Bosc or Anjou), peeled, cored, sliced
  • 1 cup (100g) ground almonds (almond flour)
  • 1/2 cup (65g) plain flour
  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) sugar
  • 2 large eggs, room temperature
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 cup sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake tin with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until pale and fluffy (about 3-5 minutes).
  3. Add the eggs one at a time to the butter mixture, beating well after each addition. Stir in vanilla extract.
  4. In another bowl, combine ground almonds, plain flour, and baking powder. Gently fold this mixture into the wet batter until just combined.
  5. Carefully mix in the pear slices, reserving some for decorating on top. Pour the batter into the prepared tin, smooth out the surface, and arrange reserved pear slices on top along with sliced almonds. Bake for 45-55 minutes or until a toothpick comes out clean from the center. Let cool for about 10 minutes before transferring to a wire rack.
