  • 1 1/4 cups all-purpose flour
  • 1/4 cup finely ground almonds
  • 1/2 cup powdered sugar
  • 5 oz cold unsalted butter
  • 1 large egg yolk
  • 2/3 cup powdered sugar (for fragipane)
  • 2/3 cup finely ground almonds (for fragipane)
  • 10 Fuyu persimmons
  • Honey (for drizzling)

Instructions

  1. Prepare the tart dough by combining flour, ground almonds, powdered sugar, and salt in a food processor. Add cold butter and pulse until crumbly. Mix in the egg yolk until a dough forms. Chill for at least 30 minutes.
  2. Make the fragipane filling by creaming unsalted butter and powdered sugar until fluffy. Beat in an egg, then stir in ground almonds, flour, salt, and almond extract until smooth.
  3. Preheat oven to 350°F (175°C). Roll out chilled dough and place it into tart pans. Fill with fragipane.
  4. Slice persimmons thinly and arrange on top of the tarts. Drizzle with honey and bake for 25-30 minutes until golden brown.
  5. Let cool slightly before serving.
