- 1 1/4 cups all-purpose flour
- 1/4 cup finely ground almonds
- 1/2 cup powdered sugar
- 5 oz cold unsalted butter
- 1 large egg yolk
- 2/3 cup powdered sugar (for fragipane)
- 2/3 cup finely ground almonds (for fragipane)
- 10 Fuyu persimmons
- Honey (for drizzling)
Instructions
- Prepare the tart dough by combining flour, ground almonds, powdered sugar, and salt in a food processor. Add cold butter and pulse until crumbly. Mix in the egg yolk until a dough forms. Chill for at least 30 minutes.
- Make the fragipane filling by creaming unsalted butter and powdered sugar until fluffy. Beat in an egg, then stir in ground almonds, flour, salt, and almond extract until smooth.
- Preheat oven to 350°F (175°C). Roll out chilled dough and place it into tart pans. Fill with fragipane.
- Slice persimmons thinly and arrange on top of the tarts. Drizzle with honey and bake for 25-30 minutes until golden brown.
- Let cool slightly before serving.
