  • 3 jalapeños
  • 1 cup fresh cilantro leaves
  • 2 green onions
  • 2 cloves garlic
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Prepare the marinade by mixing garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper in a bowl.
  2. Marinate the chicken thighs in the mixture for at least 30 minutes or overnight for better flavor.
  3. While marinating, blend jalapeños, cilantro, garlic, mayonnaise, Greek yogurt, lime juice, salt, and olive oil until smooth to make the green sauce.
  4. Preheat grill or oven to medium-high heat. Cook marinated chicken for about 6–7 minutes per side until the internal temperature reaches 165°F (75°C).
