Ingredients
- 2 pounds boneless, skinless chicken thighs
- 5 cloves garlic
- 1/3 cup soy sauce
- 2 tablespoons lime juice
- 2 tablespoons extra virgin olive oil
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Black pepper
- 3 jalapeños
- 1 cup fresh cilantro leaves
- 2 green onions
- 2 cloves garlic
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons extra virgin olive oil
Instructions
- Prepare the marinade by mixing garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper in a bowl.
- Marinate the chicken thighs in the mixture for at least 30 minutes or overnight for better flavor.
- While marinating, blend jalapeños, cilantro, garlic, mayonnaise, Greek yogurt, lime juice, salt, and olive oil until smooth to make the green sauce.
- Preheat grill or oven to medium-high heat. Cook marinated chicken for about 6–7 minutes per side until the internal temperature reaches 165°F (75°C).
- Let the chicken rest before slicing and serve warm with the creamy green sauce on top.
