- 1 lb boneless, skinless chicken thighs
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tbsp lime juice
- 1 cup fresh pineapple (cubed)
- 8 small tortillas (flour or corn)
- Optional toppings: jalapeño (sliced), avocado (sliced), red onion (diced), cilantro (chopped)
Instructions
- Marinate the chicken by mixing chili powder, cumin, paprika, and lime juice in a bowl. Coat the chicken thoroughly and let it marinate for at least 15 minutes.
- Heat a grill or skillet over medium-high heat and cook the chicken for about 5–7 minutes on each side until cooked through.
- While the chicken cooks, prepare the pineapple and toppings by chopping as needed.
- Once cooked, rest the chicken for a few minutes before slicing it into strips.
- Warm tortillas, assemble tacos with chicken and toppings, and serve immediately.
