Instructions
- In a large mixing bowl, combine well-drained crushed pineapple, shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and a pinch of salt. Mix until fully incorporated.
- Scoop out small portions of the mixture and roll into 1-inch balls using your hands.
- Roll each ball in extra shredded coconut to coat evenly.
- Place the coated balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
- Serve chilled and enjoy!
