- 1½ cups long grain white rice
- 2 cans cream of chicken soup
- 1 cup water
- 2 cups milk
- 1 envelope onion soup mix (or homemade)
- 1½ cups shredded cheddar cheese
- 3 boneless skinless chicken breasts (or thighs)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F and grease a baking dish.
- In a mixing bowl, combine rice, soups, milk, water, and onion soup mix. Stir well.
- Pour the mixture into the greased baking dish and sprinkle half of the cheddar cheese on top. Gently stir.
- Nestle the chicken pieces on top of the mixture.
- Cover tightly with foil and bake for 1.5 to 2 hours.
- Remove foil, add remaining cheese, and bake uncovered for an additional 10 minutes until melted.
- Let cool for 15-20 minutes before serving.
