  • 1 ½ sticks (170g) unsalted butter
  • 10.5 oz (300g) dark chocolate, chopped
  • 3 large eggs
  • 1 ¼ cups (250g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons almond extract
  • 1 cup (130g) pistachios, roughly chopped
  • 8 oz (227g) white chocolate, finely chopped
  • ½ cup (120g) heavy cream
  • 3 tablespoons pistachio paste
  • 1 pinch salt

Instructions

  1. Preheat the oven to 335°F (170°C). Line a 9-inch square baking pan with parchment paper.
  2. In a mixing bowl, whisk eggs and sugar until pale and thick.
  3. Melt butter and dark chocolate together in a microwave-safe bowl until smooth.
  4. Combine melted chocolate mixture with eggs and sugar, then stir in vanilla and almond extracts.
  5. Sift in flour and salt, gently folding until no streaks remain.
  6. Fold in chopped pistachios.
  7. Pour batter into the pan, smoothing the top, and bake for 20–25 minutes until slightly cracked on top.
  8. For the ganache, heat cream in a saucepan, pour over chopped white chocolate, let sit, then stir until smooth. Mix in pistachio paste and salt.
  9. Once brownies are cool, spread ganache over the top.
