- 1/2 cup white chocolate chips
- 1/4 cup pistachio paste
- 1 tablespoon heavy cream
- 1/2 cup unsalted butter
- 4 ounces dark chocolate (60–70%)
- 2 large eggs
- 2 large egg yolks
- 1/3 cup granulated sugar
- 1/8 teaspoon salt
- 2 tablespoons all-purpose flour
Instructions
- For the pistachio filling, melt the white chocolate and heavy cream until smooth. Stir in pistachio paste and salt; freeze in silicone trays.
- Preheat oven to 425°F (220°C) and prepare ramekins with butter and cocoa powder.
- Melt butter and dark chocolate together until smooth. Whisk eggs, yolks, sugar, and salt until thick, then incorporate melted chocolate mixture followed by flour.
- Fill ramekins with batter, place frozen pistachio discs in the center, and cover with more batter.
- Bake for 11 to 13 minutes until edges are firm but centers jiggle slightly. Let rest before serving.
