- 8 tbsp pistachio cream (+ extra for topping)
- 113 g unsalted butter (½ cup)
- 100 g light brown sugar (½ cup)
- 50 g granulated sugar (¼ cup)
- 1 large egg (room temperature)
- ½ tsp vanilla extract
- 160 g all-purpose flour (1⅓ cups)
- ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 100 g chocolate (½ cup + 1 tbsp)
- 45 g crushed pistachios (⅓ cup)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg followed by vanilla extract and pistachio cream until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients until just combined.
- Gently fold in chopped chocolate and crushed pistachios until evenly distributed.
- Use a cookie scoop to portion dough onto the prepared baking sheet, leaving space between each scoop.
- Bake for about 12 minutes or until golden around the edges but still soft in the center.
- Allow cookies to cool on the baking sheet for several minutes before transferring them to a wire rack.
