  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon all-purpose flour (optional, for structure)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the prepared pan.
  3. In another bowl, beat softened cream cheese until smooth, then gradually add sugar. Mix in eggs one at a time, followed by pumpkin puree, vanilla extract, pumpkin pie spice, and optional flour until well blended.
  4. Pour filling over the crust and bake for about 40 minutes or until set around the edges but slightly jiggly in the center.
  5. Cool at room temperature then refrigerate for at least four hours before cutting into squares.
