- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 24 oz cream cheese (softened)
- 3/4 cup granulated sugar
- 3 large eggs
- 1 cup canned pumpkin puree
- 1 teaspoon vanilla extract
- 1 tablespoon pumpkin pie spice
- 1 tablespoon all-purpose flour (optional, for structure)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the prepared pan.
- In another bowl, beat softened cream cheese until smooth, then gradually add sugar. Mix in eggs one at a time, followed by pumpkin puree, vanilla extract, pumpkin pie spice, and optional flour until well blended.
- Pour filling over the crust and bake for about 40 minutes or until set around the edges but slightly jiggly in the center.
- Cool at room temperature then refrigerate for at least four hours before cutting into squares.
