Ingredients
- 4 cups rice Chex
- 1 cup peanut butter
- 1/3 cup powdered sugar
- 2 cups semi-sweet chocolate chips
- 1/2 cup powdered sugar (for coating)
Instructions
- In a mixing bowl, combine peanut butter and powdered sugar. Microwave in 10-second intervals until melted and smooth.
- Crush rice Chex into small pieces in a separate bowl.
- Mix the peanut butter mixture with the crushed cereal until well-coated. Chill for 30 minutes.
- Melt chocolate chips in a double boiler until smooth.
- Roll chilled mixture into balls (about 1 1/2 tablespoons each) to form truffles.
- Coat each ball in melted chocolate and place on a baking sheet. Refrigerate until hardened.
- Once set, roll truffles in powdered sugar for extra sweetness.
