Ingredients
- 1 cup strong brewed espresso or coffee (cooled)
- ¼ cup granulated sugar
- 1 cup mascarpone cheese
- ½ cup coconut cream (unsweetened)
- 1 tsp vanilla extract
- 24 ladyfingers
- ½ cup toasted coconut flakes (for garnish)
- 2 tbsp cocoa powder (for dusting)
Instructions
- Brew the espresso or strong coffee and let it cool slightly. Stir in sugar until dissolved.
- In a mixing bowl, combine mascarpone cheese, coconut cream, and vanilla extract; mix until smooth.
- Quickly dip each ladyfinger into the cooled coffee mixture and layer them in a serving dish.
- Spread a layer of the cream filling over the ladyfingers and repeat for at least three layers.
- Dust with cocoa powder and sprinkle toasted coconut on top. Refrigerate overnight before serving.
