- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese
- 1 1/2 cups sugar
- 4 large eggs
- 3 tablespoons unsweetened cocoa powder
- 1 cup sour cream
- 1/2 cup whole buttermilk
- 2 teaspoons vanilla extract
- 1 teaspoon white vinegar
- Red food coloring
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese and sugar until creamy. Add eggs one at a time, mixing well after each addition.
- Stir in cocoa powder, sour cream, buttermilk, vanilla extract, white vinegar, and red food coloring until well combined.
- Pour batter into crust and bake for 10 minutes at 325°F; then reduce temperature to 300°F (150°C) and bake for an additional hour and 15 minutes until set.
- Allow to cool for about 10 minutes before removing from pan. Cool completely on a wire rack.
- For frosting, beat together softened cream cheese, butter, powdered sugar, and vanilla extract until smooth. Spread over cooled cheesecake.
