  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese
  • 1 1/2 cups sugar
  • 4 large eggs
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup sour cream
  • 1/2 cup whole buttermilk
  • 2 teaspoons vanilla extract
  • 1 teaspoon white vinegar
  • Red food coloring

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and sugar until creamy. Add eggs one at a time, mixing well after each addition.
  4. Stir in cocoa powder, sour cream, buttermilk, vanilla extract, white vinegar, and red food coloring until well combined.
  5. Pour batter into crust and bake for 10 minutes at 325°F; then reduce temperature to 300°F (150°C) and bake for an additional hour and 15 minutes until set.
  6. Allow to cool for about 10 minutes before removing from pan. Cool completely on a wire rack.
  7. For frosting, beat together softened cream cheese, butter, powdered sugar, and vanilla extract until smooth. Spread over cooled cheesecake.
