  • 6 fresh organic lemons
  • 750 ml high-quality lemon juice
  • 400 g granulated sugar
  • 500 ml clean water
  • 200 g additional granulated sugar
  • 200 ml clean water

Instructions

  1. Thoroughly wash the lemons to eliminate wax or pesticides, then zest them without including the bitter white pith.
  2. Place the zest in a glass jar and pour in the 750 ml of lemon juice. Seal tightly and let sit in a cool, dark place for about 24 hours.
  3. To make simple syrup, combine 400 g of granulated sugar with 500 ml of water in a saucepan over low heat until dissolved; allow cooling.
  4. Strain the lemon mixture into a mixing bowl using a fine mesh strainer to remove solids.
  5. Mix the strained liquid with the cooled simple syrup.
  6. Pour into clean bottles, seal tightly, and refrigerate until serving.
