  • 2 tablespoons olive oil (divided)
  • 1 head of garlic (top sliced off)
  • 1 lemon (quartered)
  • 1 tablespoon honey
  • Fresh basil for garnish
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine cubed potatoes with 1 tablespoon olive oil, salt, pepper, thyme, and oregano; toss to coat.
  3. Spread potatoes on a baking sheet in a single layer. Place feta in the center along with the sliced head of garlic and lemon quarters.
  4. Cover with aluminum foil and roast for about 30 minutes. Remove foil and roast for an additional 20 minutes until golden brown.
