Ingredients
- 1–2 large baking potatoes (washed and cubed)
- 7 oz (200 g) block of feta cheese
- 2 tablespoons olive oil (divided)
- 1 head of garlic (top sliced off)
- 1 lemon (quartered)
- 1 tablespoon honey
- Fresh basil for garnish
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine cubed potatoes with 1 tablespoon olive oil, salt, pepper, thyme, and oregano; toss to coat.
- Spread potatoes on a baking sheet in a single layer. Place feta in the center along with the sliced head of garlic and lemon quarters.
- Cover with aluminum foil and roast for about 30 minutes. Remove foil and roast for an additional 20 minutes until golden brown.
- Drizzle honey over the dish and garnish with fresh basil before serving warm.
