- 2 cans (6 oz each) salmon, drained and flaked
- ½ cup breadcrumbs
- 1 large egg
- ¼ cup finely chopped onion
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon paprika
- 1 tablespoon Dijon mustard
- 1 tablespoon mayonnaise
- 1 tablespoon fresh lemon juice
- 2 tablespoons olive oil (for frying)
- ½ cup plain Greek yogurt
- 1 teaspoon lemon zest
- 1 garlic clove, minced
- ½ teaspoon honey, optional
Instructions
- In a large mixing bowl, combine the flaked salmon, breadcrumbs, beaten egg, chopped onion, parsley, garlic powder, onion powder, salt, pepper, paprika, Dijon mustard, mayonnaise, and lemon juice. Stir until well incorporated.
- Using your hands, form the mixture into small patties about 2-3 inches in diameter. You should get about 8 patties. Place them on a plate and let them sit for 5-10 minutes to firm up before cooking.
- Heat olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the patties in the pan, making sure not to overcrowd them. Cook for 3-4 minutes on each side until they are golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
- In a small bowl, whisk together the Greek yogurt (or mayonnaise), lemon juice, lemon zest, minced garlic, honey (if using), Dijon mustard, salt, and pepper. Adjust seasoning to taste.
- Drizzle the creamy lemon-garlic sauce over the salmon patties or serve it on the side for dipping. Garnish with extra parsley and lemon wedges.
