- 1 cup salted butter (browned and cooled)

- 1 tsp baking soda
- 2½ cups all-purpose flour
- 1 cup chopped roasted pistachios
- Optional: 1 cup white chocolate chips, flaked sea salt for garnish
Instructions
- Start by browning the butter in a saucepan over medium heat until golden brown. Allow it to cool for 20–30 minutes.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cooled browned butter, light brown sugar, granulated sugar, and honey until creamy.
- Add one egg, vanilla extract, coarse sea salt, and baking soda; mix well.
- Gradually incorporate the all-purpose flour until just combined.
- Fold in the chopped pistachios and optional white chocolate chips.
- Scoop tablespoon-sized portions onto the prepared baking sheet with space between each cookie.
- Bake for 8–10 minutes or until edges are lightly golden.
- Cool on the tray for 5 minutes before transferring to a wire rack; sprinkle with flaked sea salt if desired.
