Instructions

  1. Start by browning the butter in a saucepan over medium heat until golden brown. Allow it to cool for 20–30 minutes.
  2. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  3. In a mixing bowl, combine the cooled browned butter, light brown sugar, granulated sugar, and honey until creamy.
  4. Add one egg, vanilla extract, coarse sea salt, and baking soda; mix well.
  5. Gradually incorporate the all-purpose flour until just combined.
  6. Fold in the chopped pistachios and optional white chocolate chips.
  7. Scoop tablespoon-sized portions onto the prepared baking sheet with space between each cookie.
  8. Bake for 8–10 minutes or until edges are lightly golden.
  9. Cool on the tray for 5 minutes before transferring to a wire rack; sprinkle with flaked sea salt if desired.
