Ingredients

  • Chicken breast pieces
  • Potatoes, cubed
  • Red bell pepper
  • Green bell pepper
  • Garlic cloves, minced
  • Olive oil
  • Mixed dried herbs (oregano, thyme, basil)
  • Paprika
  • Salt & pepper
  • Steamed white rice
  • Chopped fresh chives

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables. Cube the potatoes and slice the bell peppers.
  2. In a mixing bowl, combine olive oil, minced garlic, mixed herbs, paprika, salt, and pepper. Add chicken and potatoes; toss until well-coated.
  3. Preheat your oven to 400°F (200°C). Spread the seasoned chicken and potatoes on a baking sheet and roast for 20 minutes.
  4. Add sliced bell peppers to the baking sheet and return to the oven for another 10 minutes until everything is cooked through.
