- Chicken breast pieces
- Potatoes, cubed
- Red bell pepper
- Green bell pepper
- Garlic cloves, minced
- Olive oil
- Mixed dried herbs (oregano, thyme, basil)
- Paprika
- Salt & pepper
- Steamed white rice
- Chopped fresh chives
Instructions
- Prepare your ingredients by washing and chopping the vegetables. Cube the potatoes and slice the bell peppers.
- In a mixing bowl, combine olive oil, minced garlic, mixed herbs, paprika, salt, and pepper. Add chicken and potatoes; toss until well-coated.
- Preheat your oven to 400°F (200°C). Spread the seasoned chicken and potatoes on a baking sheet and roast for 20 minutes.
- Add sliced bell peppers to the baking sheet and return to the oven for another 10 minutes until everything is cooked through.
- Serve alongside steamed rice and garnish with fresh chives.
