  • 1 C granulated sugar
  • 1 C light brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 2 1/2 C all purpose flour
  • 1/4 C granulated sugar (for topping)
  • 1 1/2 tsp cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl or stand mixer, cream together softened butter, granulated sugar, and light brown sugar until fluffy. Add eggs one at a time and mix well after each addition. Stir in vanilla.
  3. In another bowl, whisk together flour, baking powder, salt, and cinnamon. Gradually combine dry ingredients with wet ingredients until smooth.
  4. Press the batter into the prepared pan evenly and sprinkle with a cinnamon-sugar mixture (granulated sugar mixed with cinnamon).
  5. Bake for 25–30 minutes until golden brown; check doneness with a toothpick. Allow cooling before slicing.
